Last year, I baked a Yule Log for the first time! It was very messy. I had no idea what I was doing and it looked like a total disaster until the very last steps. At the time I never ever wanted to bake another one but it tasted soo good and Will has wanted me to make another ever since. So this weekend I decided to finally revisit the Yule Log.
I shared a recipe last Blogmas but I’ve updated it a little bit and decided to share it with you because it was much more of a success story this time round 😀
125g caster sugar
4 large eggs
60g softened butter
125g plain flour
1 teaspoon baking powder
2 tablespoons water
25g Cocoa Powder
150g butter, softened
200g icing sugar (plus extra for dusting)
100g dark chocolate, chopped, melted and cooled
25g Cocoa Powder
A splash of milk
First, preheat the oven to 180 C and grease and line a swiss roll tin.
Next, mix together the eggs and sugar. Add the softened butter, flour, baking powder and water. Beat until well combined.
Still mixing, slowly add the cocoa powder until thoroughly mixed in.
Pour the cake mixture into the prepared tin, making sure it’s been spread evenly.
Pop it into the preheated oven for 12 minutes.
After baking, wait a few minutes and then carefully turn out the cake onto a large piece of baking paper. Roll the paper and the cake from one short end to the other and leave to cool. It’s important to do this step whilst the sponge is still hot so that it doesn’t crack! You can use a clean tea towel to help you roll it up so that you don’t burn yourself.
Whilst your sponge is cooling, you can make the buttercream.
Beat the softened butter until light and creamy. Gradually add the icing sugar. Add the cooled melted chocolate and cocoa powder and beat until well combined. If the icing is too tough, add a splash of milk to soften it.
Carefully unroll the cooled sponge and spread a layer of buttercream to the edges.
Firmly roll the sponge back up.
Using the remaining buttercream, cover the entire roll. It doesn’t need to be neat – the rough edges make it look more like the bark of a tree! You can drag a fork across the buttercream to add to the bark effect.
The next bit is my favourite – it changes your bake from a messy looking chocolate cake so a magical, snowy yule log! Use a sieve to dust the log with icing sugar to look like snow and add optional decorations. This time I added little sparkly snowflake sprinkles and some festive holly sprinkles.
Leave the frosting to set and then it’s ready to serve!
Ahhhh. I am so happy with the outcome of this Yule Log. It wasn’t half as messy this time because I knew what I was doing. I’m much happier with the texture of the icing too – it’s much more bark-like and far less crumbly! Practice really does make perfect!
