I have returned!
After not having internet for a week, working 7 days straight and an accident at work I am finally back to writing blog posts and baking! The weather is still gorgeous here in the UK so I’ve tried to embrace summer with this strawberry lemonade cupcake recipe…
110g caster sugar
110g plain flour
2 tsp baking powder
A few strawberries, finely chopped
Juice of 1/2 Lemon
300g icing sugar
1 tbsp milk
Juice of 1/2 Lemon
Pink food colouring gel
Yellow food colouring gel
Slices of strawberry and jelly lemon slice decorations
To make my cupcakes, I started by putting some cake cases into cake trays (I used 2 different colour cases) and preheated the oven to 160 degrees.
In a bowl, I mixed together the butter, sugar, baking powder, flour and eggs until everything had blended nicely and the mixture was smooth.
I was really undecided whether I wanted to make a lemon sponge with strawberry icing or vice versa. So I decided to split my mixture to make half and half. I divided the mixture in half into 2 bowls. In one bowl I stirred in a few drops of pink gel and chopped strawberries, in the other I added the lemon juice.
I then spooned the mixture into the cases, making the pink cases strawberry sponge and the white cases lemon, this way when the cakes were baked, I’d know exactly which were which.
I put the trays in the oven and let the cakes bake for 20-25 minutes until the sponge was golden and springy.
To decorate the cupcakes, I mixed the butter, milk and icing sugar together.
Similar to the cake mixture, I split it into 2 bowls making half pink with a drop of strawberry flavouring and a drop of pink colouring gel. In the other bowl, I added lemon juice to taste and a drop of yellow colouring gel.
Using a piping bag, I piped the strawberry icing onto the lemon sponge cakes and the lemon icing onto the strawberry sponge cakes.
To decorate I added a small slice of strawberry and a little jelly lemon slice!
