Baking Strawberry and Vanilla Cupcakes

My first bake of 2018: strawberry and vanilla cupcakes!
(Makes 12)

110g butter
110g caster sugar
110g plain flour
2 eggs
2 tsp baking powder
1 tsp strawberry flavouring
1 tsp vanilla extract
Pink food colouring gel

140g butter
300g icing sugar
1 tbsp milk
Decorations (I used pink sprinkles and ready-made pink fondant icing)

To make my cupcakes, I started by putting some cake cases into cake trays. I was trying to stick with a Valentines Day theme for these cakes so I chose some pink polka-dot cases.

In a bowl, I mixed together the butter, sugar, baking powder, flour and eggs until everything had blended nicely and the mixture was smooth.

I divided the mixture in half into 2 bowls. In one bowl I stirred in a few drops of pink gel and a teaspoon of strawberry flavouring.

In the second bowl, I added vanilla extract.

I spooned the mixture into the cases, using the pink mixture as the bottom layer and topping it off with the vanilla.

I put the trays in the oven and let the cakes bake at 160 degrees for 20-25 minutes until the sponge was golden.

To decorate the cupcakes, I mixed the butter, milk and icing sugar together.

I made fondant roses using ready-made fondant icing and a silicone icing mould (here’s a link to one similar to mine!) Then I added some pink sprinkles!

I think these little cupcakes look perfect for Valentine’s Day, a birthday, Mother’s Day or even a baby shower!

    1. I definitely recommend silicone moulds! One day I’ll learn to mould it myself but until then the silicone mould is perfect πŸ˜€
