Baking Autumn Leaf Biscuits

This month has been pretty busy so when the weekends come along all I find myself doing is sleeping and baking. This week my sister and I had a go at making some biscuits and they are filled with sugar, spice and everything nice!

Things you’ll need
Baking tray
Non-Stick Baking paper
Rolling Pin
Leaf cookie cutter
(Or in my case, I used a blunt knife to cut the leaf shapes because I couldn’t find any leaf-shaped cookie cutters!)

175g plain flour
½ tsp baking powder
50g butter
100g light soft brown sugar
1 egg yolk (lightly beaten)
50g golden syrup
1 tsp vanilla extract
½ tsp ground ginger
¼ tsp cinnamon
¼ tsp nutmeg

A little bit of icing sugar for dusting

Firstly, preheat the oven to 190C/fan 170C/gas 5 and line a baking tray.

In a bowl, sift together the flour, baking powder, cinnamon, nutmeg and ginger.

In a separate bowl, melt together the butter and syrup. Add in the sugar, vanilla extract and the yolk and stir together until smooth.

Mix all of the ingredients together until combined into a smooth dough.

(At this point it all looked and smelt good enough to eat – who needs an oven?!)

Dust a clean surface with a little bit of flour and roll out the dough until it is around 0.5cm thick.

Next use your cookie cutter (or carefully use a knife like I did) to cut leaf shapes from the dough and place them onto the lined baking tray. Make sure to leave a space between each one because they do spread a little bit!

Pop them in the oven for 15 minutes or until they turn golden brown.

Leave to cool for a while before moving them. You could also give them a light dusting of icing sugar!

I am having such a great time baking autumnal treats!
Next weekend I am off on a family adventure to my local craft store to buy plenty of Halloween-themed supplies so look out for some fun DIY posts over the next few weeks!
