Baking Apple Blondies with cinnamon & nutmeg

One of my favourite things about this time of year is autumnal recipes. Inspired by lots of recipes I’ve seen on Pinterest and Instagram, I made these apple blondies with cinnamon and nutmeg. They aren’t particularly healthy but they are delicious. They’re crisp on the outside, a little gooey on the inside and the spices and apple in every bite means they taste (and smell) like Autumn!


115g unsalted butter
2 medium apples, diced
100g caster sugar
100g soft light brown sugar
175g plain flour
1 large egg, lightly beaten
1 tbsp vegetable oil
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg

Square 8″ brownie tin


First, preheat the oven to 180C/fan 160C/gas 4 and grease the brownie tin.

Sieve the flour, sugar and baking powder in a mixing bowl. Stir in the butter and the egg until blended together. Add in the vegetable oil followed by the vanilla extract, cinnamon, nutmeg and apples.

Pour the mixture into the brownie tin and spread evenly. Bake in the oven for 25 minutes or until a tester inserted into the center comes out clean. Allow the blondies to cool and cut into squares or rectangles to serve.
